  • fresh runner beans: 1 kg
  • onions: 2 finely chopped
  • olive oil: 2/3 cup
  • parsley: ½ cup, finely chopped
  • garlic: 3 cloves, finely chopped
  • tomatoes: 6 firm, ripe
  • tomato paste: 1 teaspoon
  • vegetable stock cube:1
  • salt
  • pepper freshly ground
  • sugar: pinch


  1. Clean, wash and drain beans and then blanch them for 1 minute in hot water. Remove skins and seeds from tomatoes and chop finely.

  2. Heat the oil in a saucepan and sauté the onion and garlic. Add the fresh tomatoes, tomato paste thinned in a cup of water and the beans.

  3. Then add the parsley, vegetable cube and sugar. The water should half cover the beans. Simmer for about 50 minutes. Add salt and pepper just before cooking is finished.
