Runner beans in tomato sauce (Fasolakia kokkinista)
- fresh runner beans: 1 kg
- onions: 2 finely chopped
- olive oil: 2/3 cup
- parsley: ½ cup, finely chopped
- garlic: 3 cloves, finely chopped
- tomatoes: 6 firm, ripe
- tomato paste: 1 teaspoon
- vegetable stock cube:1
- pepper freshly ground
- sugar: pinch
Clean, wash and drain beans and then blanch them for 1 minute in hot water. Remove skins and seeds from tomatoes and chop finely.
Heat the oil in a saucepan and sauté the onion and garlic. Add the fresh tomatoes, tomato paste thinned in a cup of water and the beans.
- Then add the parsley, vegetable cube and sugar. The water should half cover the beans. Simmer for about 50 minutes. Add salt and pepper just before cooking is finished.
