  • 2-3 kgs pork (boneless loin or tenderloin)
  • skin-on and rolled
  • 2-3 garlic cloves, halved
  • 2/3 cup olive oil
  • 1 1/2 kg potatoes coarsely chopped (optional)
  • 2 large onions
  • 2 bay leaves
  • few drops of tabasco
  • salt and pepper
  • allspice grain


  1. Salt and pepper the pork and put the garlic cloves in different places inside the meat. Peel the onions and cut them into slices. Place the meat, the potatoes (optional) and the onions in a pot. Salt and pepper the potatoes and the onions and then add bay leaves and allspice. Pour half a cup of water in the pot and then sprinkle the ingredients with the oil.

  2. Bake the pork in a moderate oven at 180-200°C for about 2 hours. During cooking, add a little extra water if needed. Uncover the pot and let the skin of the pork turn golden brown. Add the Tabasco in the end, 10' before the baking is over.
