New Years Cake (Vasilopita)
Ingredients
- Flour for all purpose: 4 glasses and a little extra for the baking mold
- Baking powder: 4 teaspoons
- Sugar: 500 g.
- Fresh butter: 280 g. and a little extra for the baking mold
- Milk: 250 ml
- Eggs: 6
- Lemon: 1, juice and zest
- Salt: a little
- Caster sugar for sprinkling
Directions
Sift flour together with baking powder and salt. Beat in a mixer butter and sugar, until they turn fluffy and blanched. Pour the eggs one by one and continue beating with the mixer.
Then add the flour and milk alternately while beating with the mixer on low speed. In the end, add the juice and zest of a lemon while you keep on beating.
Grease and sprinkle with butter and flour respectively a big, round baking mold with removable sides. Turn it upside down and shake it, so that the extra flour drops off. Spread the mixture inside the mold and bake it in a preheated oven at 180° C, for 1 hour. If you want to put a coin inside, wrap it in foil and place it when the cake is half-baked.
When you are sure that the cake is well baked (you can check it by drilling a hole in the center of the cake with a toothpick), you take it out of the mold and place it on a large platter that you have sprinkled with powdered sugar. Also, sprinkle a layer of caster sugar on the cake and after that write the number of the New Year with icing.
