  • 1k whole wheat flour
  • 8-10 gr active dry yeast
  • 4-5 tbsp olive oil
  • 1/2 tbsp. salt
  • 1/2 tbsp. sugar
  • 1 tgsp. vinegar
  • 2/3 cups pitted and chopped olives
  • 2 tsp. thyme


  1. In a large bowl, mix together 1/2 cup of warm water and the yeast. Let stand 10 minutes. Add the olive oil, 2 more cups of water, the flour, the salt, the sugar and the vinegar.

  2. Stir until all ingredients are combined and knead the dough for about 5 minutes, Add the olives and the thyme and knead again. Cover the dough and let it stand in a warm place about 1 hour.

  3. Preheat oven to 180˚C. Lightly oil the oven pan. Divide dough into two portions and shape it into two loaves. Place it in the oven pan and bake for 45 to 50 minutes, or until golden brown.
