Salad with pears and walnuts
- 200g spinach, or any other type of green
- 2 spring onions, chopped
- 100g walnuts, roughly chopped
- 2 pears, sliced
- 150g gorgonzola, crumbled
- For the dressing:
- 200ml cream
- 2tbsp sunflower or sesame oil
- 1/2 tsp mustard
- 1tsp lemon juice
- 1 tsp chopped parsley
Roast the walnuts in a nonstick pan. To a bowl add the salad leaves, pears, spring onions, gorgonzola, and mix.
In a blender, mix the oil, mustard, lemon juice and cream, and pour over the salad. Sprinkle with the roasted walnuts and serve.
