  • 700g augergines, sliced
  • 500g chopped tomatoes
  • 200g cream cheese
  • 500ml milk
  • 1/2 cup flour
  • 200g grated yellow cheeses
  • 3 eggs
  • 2 cloves garlic, chopped
  • 1 onion, chopped
  • some fresh rosemary
  • olive oil
  • salt and pepper


    1. Wash the aubergines and cut them into slices Salt them and cover with flour. Grease an ovenproof dish with olive oil and put a layer of aubergines on the bottom. 

    2. In a pan, heat some olive oil and sautee the onion and garlic for a few minutes. Add the chopped tomatoes and simmer for 8-10 minutes on high heat. Add salt and pepper and the rosemary. 

    3. In a large bowl, beat the eggs, add the milk and cream cheese, and mix. 

    4. Pour half the tomato sauce over the aubergines, followed by hald the egg mixture and half of the cheeses. Add another layer of aubergines, and layer with the rest of the cheeses, the tomato sauce, and the egg mixture. Bake in a preheated oven at 180° C for about 45 minutes.
