Potato rostis (potato fritters)
Ingredients
- 500g potatoes, peeled
- 2 eggs, beaten
- salt and pepper
- butter or olive oil, for frying

Grate the potatoes in the grater, and leave them to soak in a bowl of cold water. Drain them well using your hands, and place them in another bowl. Add the eggs, salt and pepper, and mix well.

Hear 2-3 tbsp butter or olive oil in a pan, and add spoonfuls of the potato mixture. shape them into pancakes using the back of a fork or spoon, and fry at medium heat for 4 minutes on each side. Add more butter or olive oil and continue frying until you've used up all the mixture.
