Corn tortillas with eggs and bacon

  • 8 corn tortillas
  • 400g bacon
  • 1 red pepper
  • 1 green pepper
  • 4 eggs
  • 1 tbsp margarine
  • 200g canned corn
  • 2 tbsp olive oil
  • salt and pepper


    1. Cut the bacon into strips and fry until golden brown. Drain on absorbent paper. Chop the peppers and onion. Mix together and sautee in 2 tbsp olive oil. Scrable the eggs in a nonstick pan in which you have melted some margarine. Mix the eggs with the peppers and onion, adding the corn. Add salt and pepper.

    2. On each tortilla, add some of the egg and vegetable mixture, some bacon, and fold as shown in the photo. 

    3. Prepare the sauce as follows: mix the mayonnaise, lemon juice, olive oil, garlic, sweet pepper, and a little bit of salt. Serve with the tortillas.
