  • 1 medium white cabbage
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1/2 bunch parsley, chopped
  • 1 onion, chopped
  • 200g tomato juice (passata)
  • 1/2 cup rice
  • salt and pepper
  • olive oil
  • shop bought or homemade vegetable stock


    1. Sautee all the vegetables in olive oil. Add water until the vegetables are just covered, then add salt, pepper, passata, and the vegetable stock

    2. Simmer for 10-15 minutes, then add the rice and simmer for a further 10 minutes (add water if necessary). Serve.


Several variations of this dish can be found throughout Greece - including with spinach, leeks, and aubergines. Best served with lemon juice, feta cheese, and bread.
