Olive oil scented with thyme
Makes 1 Liter:
- 1 liter olive oil
- 1 bunch fresh thyme
- a little rosemary
- 1tsp black peppercorns, roughly chopped
Instructions
Chop the herbs and mix with the olive oil and pepper. Place in the fridge for 1 week, then drain. You can use this olive oil for about 1 month. Can be used in steamed vegetable salads or as in a vinaigrette dressing. It can also be used to marinate fish or chicken.
