Walnut cake (Karydopita)
Ingredients
- eggs:3
- sugar: 3 tbs
- self-raising flour: ¾ cup
- ground cinnamon: 3 tsp.
- butter: 185 gr., melted
- coarsely chopped walnuts: ¾ cup
- For the syrup
- sugar: 1 cup
- water: ¾ cup
- lemon: ½
Directions
Butter a medium-size rectangular baking dish whose sides are approximately 23 cm. Beat the eggs and the sugar in a bowl with a mixer until the mixture turns white. Add the flour sifted with the ground cinnamon, mixing all the while. Add the butter and walnuts.
- Pour the batter into the baking dish and bake at 180ο C for 35-40 minutes. Leave in the oven and prepare the syrup. Mix the water and sugar in a pot and add the peel of half a lemon. Boil for 7-8 minutes. Remove the peel, and pour the syrup over the cake.PHOTO: alevri.com
