Wash the peppers, cut the stalks and throw the seeds. Salt them lightly, add some of the olive oil and bake peppers and stalks for 10' (grill).
Mix and mash the cheeses with a fork, add some olive oil, pepper and parsley and fill with this mixture the peppers.
Put back the stalks to the peppers by keeping them closed with toothpicks. Pour the remaining olive oil and bake them again until they get a nice color.
