Pasta with chicken in tomato sauce (Pastitsada me kotopoulo)
- chicken: 1 medium (approximately 1.250g)
- olive oil: 6 tablespoons
- onion: 1 large, finely chopped
- garlic: 2 cloves, minced
- tomatoes: 5-6 fresh
- sugar a bit
- bay leaf: 1
- parsley: 2-3 tablespoons, finely chopped
- salt: a bit
- pasta no 2 or 3: 500g
- pepper freshly ground
Cut the chicken into portions, wash and dry it. Add salt and pepper. Heat the olive oil in a large pot and add the chicken.
Remove from the pot when browned and add the finely chopped onion and the minced garlic. As soon as they begin browning, add the chicken again.
Wash the tomatoes, peel them, remove seeds and excess liquids and chop them finely. Add them to the pot and then add the sugar and the bay leaf. Simmer for 50-55 minutes and add the parsley.
Bring water to a boil, add the pasta and cook according to the packaging directions. Stir the chicken with the sauce and serve with pasta and cheese.
