Ingredients

  • okra: 900g
  • vinegar: a bit
  • olive oil: 1 cup
  • onions: 2, finely chopped
  • potatoes: 2, thinly sliced
  • fresh or tinned tomatoes: 600g
  • parsley: 3 tablespoons, finely chopped
  • sugar pinch
  • lemon: 1
  • fresh tomatoes: 2
  • salt
  • freshly ground pepper

Directions

  1. Remove the stems from the okra and wash them well in a bowl with water and a little vinegar. Heat oil in a wide, shallow saucepan and fry the onions lightly over high heat. Add potatoes, tinned tomatoes, the finely chopped parsley, sugar, pepper and three slices of lemon without the peel. Simmer for 10 minutes. Dry the okra and place them in this mixture.

  2. Then remove the skins and seeds from the fresh tomatoes, chop them finely and mix them with the rest of the vegetabls. Sprinkle with a little salt and pepper and cook over moderate heat for 15-20 minutes without stirring, so that the okra does not break up.

Tips

Okra (bamies in greek) can be a real delicacy when cooked with other fine vegetables such as tomatoes, onions and potatoes. You can serve them either hot or cold and accompany them with some feta cheese.
