“Married” split peas appetizer (Fava “pantremeni”)
- yellow split peas: ½ kg
- onions: 4, finely chopped
- olive oil: ½ cup and a bit extra for garnish
- tomatoes: 2, ripe, firm, finely chopped
- capers: 1-2 tablespoons
- lemon juice: from 1 lemon
- salt: a bit
- pepper: freshly ground
Heat the olive oil and sauté three of the finely chopped onions until they are wilted. Add the split peas and plenty of hot water (water should totally cover the split peas). Salt and pepper and let the fava boil for 50 minutes, stirring frequently. When the fava has become creamy, it is ready.
Serve with the fourth onion finely chopped, tomatoes, a few capers, a bit extra olive oil and the lemon juice.
