Fluffy cheese pie Afrati tyropita
- phyllo pastry: 500 gr.
- feta cheese: 300 gr.
- myzithra cheese: 300 gr.
- kefalograviera cheese: 200 gr., grated
- milk: ½ litre
- eggs: 5
- club soda: 200 ml.
- olive oil: ½ cup
- butter: ½ cup, melted
- pepper freshly ground
Grease a baking dish with oil and butter and lay 4 sheets of pastry that have also been greased. Crumble the feta and myzithra, add the kefalograviera and pepper, mix and then add the eggs beaten with the milk.
Pour a portion of the cheese mixture in the baking dish and cover with a sheet of pastry. Add more cheese mixture and cover with another phyllo. Pour in the remaining cheese mixture and cover the pie with the remaining greased sheets of pastry.
- Score the pie to indicate where the pieces will be cut when baked. Bake in the oven at 200ο C for 40 minutes. Remove from the oven, pour the club soda over it and continue to bake for a further 20 minutes until the soda has been absorbed and the pie has risen.
