  • phyllo pastry: 500 gr.
  • feta cheese: 300 gr.
  • myzithra cheese: 300 gr.
  • kefalograviera cheese: 200 gr., grated
  • milk: ½ litre
  • eggs: 5
  • club soda: 200 ml.
  • olive oil: ½ cup
  • butter: ½ cup, melted
  • pepper freshly ground


  1. Grease a baking dish with oil and butter and lay 4 sheets of pastry that have also been greased. Crumble the feta and myzithra, add the kefalograviera and pepper, mix and then add the eggs beaten with the milk.

  2. Pour a portion of the cheese mixture in the baking dish and cover with a sheet of pastry. Add more cheese mixture and cover with another phyllo. Pour in the remaining cheese mixture and cover the pie with the remaining greased sheets of pastry.

  3. Score the pie to indicate where the pieces will be cut when baked. Bake in the oven at 200ο C for 40 minutes. Remove from the oven, pour the club soda over it and continue to bake for a further 20 minutes until the soda has been absorbed and the pie has risen.
