Babanetsa (pie from Lamia)
- 1 ½ kilo wild greens
- 400 gr. hard feta cheese
- 2 ½ glasses olive oil
- 3 ½ corn flour
- pepper freshly ground
Finely chop all the greens, add a bit of salt and squeeze with your hands. Wring them well so that you get rid of the liquids. Crumble the cheese into small pieces and add to the greens. Add pepper. Grease a baking dish. Mix the corn flour, the oil and some salt and water to make a thick pasty dough.
Spread this on the dish. Add the greens, press well and add half the glass of oil. Sprinkle a bit of flour over the greens so as to just cover them.
Sprinkle with a bit of water and the remaining oil. Bake for 60 minutes at 200-250º C.
