In a bowl, mix all the ingredients for the pastry dough, until you have a soft dough. Cover and place in the fridge for 30 minutes. Spearate the dough into 4 pieces and roll them out into sheets, using a rolling pin.
Mix the cheeses and pepper.
Grease a baking tin, and line it with one pastry sheet. Brush it with a little olive oil, then add a layer of the cheese mixture. Cover with the second pastry sheet and add another layer of cheese. Then cover with the third pastry sheet, add another layer of cheese, and cover with the fourth pastry sheet.
Beat the eggs and milk and pour over the pie. Bake in a preheated oven at 180° C for about 1 hour.
