Spinach with fried eggs
Ingredients
- 500g spinach
- 5-6 spring onions
- 1 bunch of dill
- 100g margarine
- 5tbsp grated hard yellow cheese (e.g. kefalotyri or similar)
- 100g anthotyro or myzithra or similar
- 4 eggs
- salt and pepper
Directions

Wash the spinach and drain well. Chop the spring onions and dill.

Sautee the spinach in half the margarine, together with the spring onions, dill, salt and pepper. Take off the heat, add the anthotyro or myzithra.

Add salt and pepper and the yellow cheese and serve on 4 plates. Fry the eggs in the rest of the margarine and serve one egg on each plate.
