Ingredients

  • 15 g. fresh yeast or 1 1/2 tsps active dry yeast
  • 2 1/2 cups hot water
  • 1 kg strong flour
  • 1/3 cup sugar
  • 1/4 cup vegetable oil
  • 2 tsps salt
  • 400 g. sesame

Directions

  1. In a bowl, dissolve yeast in 1/2 cup of warm water, add 2-3 tsps of flour. Cover the mixture and let it in a warm place to rise for 24 hours .

  2. Just before kneading, dissolve the rest of the yeast in 1/2 cup warm water, stir in 2-3 tsps flour and leave the mixture for 15 minutes.

  3. In a large bowl, sift 3/4 of the remaining flour with the salt. Stir in sugar, oil, the two mixtures of yeast and the rest of the water. Knead the dough until it becomes smooth and elastic. Cover the bowl and let the dough rise in a warm place until double in volume.

  4. Press the dough to deflate and knead for 5 minutes . Take pieces of dough the size of a big nut. Shape them in cords as thick as your little finger. Dip quickly in a bowl of water and then in a bowl of sesame . Shape the dough cords in rings and place them on a baking tray after having lined it with parchment paper.

  5. Bake at 220 ° C for 10' - 15'.
