Chips with bacon and cheese
- 6-8 large potatoes
- 6-8 bacon slices
- grated cheese (e.g. kefalotyri, pecorino, cheddar, etc), as much as you like
- oil, for frying
- salt and pepper
Wash and peel the potatoes. Cut them into strips. Put them in a bowl of cold water, rinse and dry well.
Fry the potatoes until golden in a pan of very hot oil
Cut the bacon into square pieces and sautee it in a nonstick pan until crispy. Remove the potatoes from the pan, let them drain on absorbent paper, then add the bacon and cheese and serve.
