Chips with bacon and cheese

  • 6-8 large potatoes
  • 6-8 bacon slices
  • grated cheese (e.g. kefalotyri, pecorino, cheddar, etc), as much as you like
  • oil, for frying
  • salt and pepper


    1. Wash and peel the potatoes. Cut them into strips. Put them in a bowl of cold water, rinse and dry well.

    2. Fry the potatoes until golden  in a pan of very hot oil

    3. Cut the bacon into square pieces and sautee it in a nonstick pan until crispy. Remove the potatoes from the pan, let them drain on absorbent paper, then add the bacon and cheese and serve. 


Did you know you can make chips in the oven (cut as you would if you fried them) simply by placing them in a non stick pan and adding some oil, salt, and oregano? Bake normally until golden.
