Apple, walnut and roquefort cheese salad

  • 200g mixed salad leaves
  • 2 spring onions, chopped
  • 100g walnuts, chopped
  • 1 carrot, grated
  • 1 apple (red or green), cut into cubes
  • 100g Roquefort or blue cheese
  • For the dressing:
  • 2/3 cup mayonnaise
  • 2 tbsp sunflower or sesame oil
  • 1/2 tsp mustard
  • 1 tsp lemon juice
  • 1 tbsp chopped parsley (optional)


    1. Roast the walnuts in a nonstick pan. To a salad bowl, add the salad leaves, apple, spring onions, carrot and cheese and mix. 

    2. In a blender, mix the oil, lemon juice and mayonnaise and pour over the salad. Sprinkle with the walnuts and parsley and serve.
