Apple, walnut and roquefort cheese salad
- 200g mixed salad leaves
- 2 spring onions, chopped
- 100g walnuts, chopped
- 1 carrot, grated
- 1 apple (red or green), cut into cubes
- 100g Roquefort or blue cheese
- For the dressing:
- 2/3 cup mayonnaise
- 2 tbsp sunflower or sesame oil
- 1/2 tsp mustard
- 1 tsp lemon juice
- 1 tbsp chopped parsley (optional)
Roast the walnuts in a nonstick pan. To a salad bowl, add the salad leaves, apple, spring onions, carrot and cheese and mix.
In a blender, mix the oil, lemon juice and mayonnaise and pour over the salad. Sprinkle with the walnuts and parsley and serve.
