  • Makes 28-30 pieces:
  • 1 liter milk
  • 50g fine semolina
  • 2 tbsp corn flour
  • 150g sugar
  • 6 eggs
  • 180g fresh butter
  • peel from 1/2 orange
  • 1 packet (450g) filo pastry
  • For the syrup:
  • 300g sugar
  • 1/2 liter water
  • peel and juice from 1/2 orange


    1. Prepare the cream as follows: beat the eggs and sugar and add the cornflour, dissolved in a little molk, then add half the semolina and the rest of the milk (warmed up). Pour into a pot, place on the heat, and add the rest of the semolina, mixing constantly until the cream sets. Then add the orange peel and mix. 

    2. cut each pastry sheet into 4 rectangular pieces. Place two buttered pieces on top of one another, then add 2tbsp cream on one side. Roll up. Repeat until you have used up all you filo pastry and cream.

    3. Bake at 180° C for 45΄ until golden. Boil the ingredients for the syrup for 5-6 minutes. When the rolls are cooled, add the warm syrup.
