Almond cake from Lesvos

  • 6 eggs
  • 1 cup roughly chopped white almonds
  • 1 cup melted butter
  • 1 cup sugar
  • 1 1/2 cup self-raising flour
  • 3/4 cup fine semolina
  • 2 tsp baking powder
  • peel from 1 lemon
  • For the syrup:
  • 3 cups sugar
  • 3 cups water


    1. Separate the yolks from the whites, and beat the yolks with the sugar until smooth. Gradually add the rest of the ingredients, mixing well. Add the egg whites last, after you have beaten them. 

    2. Pour the mixture into a nonstick or greased baking tin and bake for 45 minutes at  180° C. As soon as the cake comes out of the oven, pour the cold syrup over it. To make the syrup, boil the water and sugar until combined.
