Tomato, aubergine and savory sauce

  • 800g fresh ripe tomatoes (or tinned tomatoes)
  • 1 aubergine, cut into very thin slices
  • 1 large onion, chopped
  • 3-4 tbsp olive oil
  • 1 glass wine
  • a little savory
  • salt and pepper
  • a pinch of sugar


    1. In a pot, heat the olive oil. Sautee the oniones, then add the garlic and sautee for a further 1-2 minutes. Add the wine. 

    2. Add the tomatoes, salt, pepper, savory, sugar, and aubergine. cover the pot and simmer until the sauce is thick and the aubergine cooked. 


Delicious with any kind of pasta, or even with meat.
