Potato rostis (potato fritters)

  • 500g potatoes, peeled
  • 2 eggs, beaten
  • salt and pepper
  • butter or olive oil, for frying


    1. Grate the potatoes in the grater, and leave them to soak in a bowl of cold water. Drain them well using your hands, and place them in another bowl. Add the eggs, salt and pepper, and mix well. 

    2. Hear 2-3 tbsp butter or olive oil in a pan, and add spoonfuls of the potato mixture. shape them into pancakes using the back of a fork or spoon, and fry at medium heat for 4 minutes on each side. Add more butter or olive oil and continue frying until you've used up all the mixture. 


If you wish, you can serve the rostis with some mayonnaise or grated cheese and herbs. For extra taste, you can sprinkle the rostis with grated yellow cheeses and bacon, and grill in the oven until the cheeses have melted.
