Plastos (maize flour pie from Trikala)

  • 500g maize flour
  • 4 tbsp extra virgin olive oil
  • 500g leeks
  • 1 bunch spring onions
  • 500g feta
  • salt and pepper


    1. Grease a baking tin and add half the flour to cover the bottom. Sprinkle with some water. 

    2. Sautee the leeks and spring onions, adding salt and pepper. Then add the feta. add to the baking tin, and cover with the rest of the maize flour, which should cover the whole pan.

    3. Sprinkle with water, and bake for about one hour. During baking, sprinkle the top of the pie with water, to prevent drying.


A delicious pie (without filo) popular throughout Thessaly. Perfectly paired with yogurt, kefir, or buttermilk.
