Mixed vegetables in tomato and olive oil sauce

Ingredients

  • 1 onion, chopped
  • 500g mixed vegetables, fresh or frozen
  • 3-4 spring onions, chopped
  • 1/2 bunch dill, chopped
  • 1 cup olive oil
  • 500g tomato juice or chopped tomatoes
  • salt and pepper

Directions

    1. In a large pot, heat the olive oil and sautee the onion and spring onion until soft. Add the vegetables and dill and sautee at medium heat for 7 minutes. Add 1 1/2 cup water and mix. 

    2. After 20 minutes, add the tomato, salt, pepper, and 1 1/2 cup water. Cook for a further 20 minutes until the sauce is thick and the vegetables cooked. Serve with feta and bread.
